Question: What is the best advice you ever received to cook well?
Answer: The truth is that I can’t cook at all. My mother was a very good cook and my wife is even better.
Still the advice I heard about cooking that I thought was useful is that without spices, without mixing different, “contrasting” tastes in a clever way we can’t appreciate the food.
Only opposite, seemingly contradictory spices, qualities can accentuate the tastes, thus in a good, tasty food we have such spices that force us to evaluate one taste against the other…
